Gingerbread Eiffel Tower

To commemorate a certain special occasion that took place earlier this year, I decided to build the Eiffel Tower, in all its majesty, out of gingerbread.  This isnโ€™t the first gingerbread Eiffel Tower in the world, but this may be the first one made with only 4 pieces of gingerbread.

To achieve this marvelous feat of culinary engineering, I built a baking ramp with the same slope as the profile of the tower, so each face of the tower came out curved.  As a result, each side fit together perfectly โ€“ er, close enough for gingerbread.

  1. Hi Joanna,

    The key is to start with a good template of the eiffel tower. If you click the photos at the bottom, you’ll see that I’ve just uploaded the template I used. Print this out as large as you’d like your finished eiffel tower to be. Then, to make working with the template easier, glue it to a piece of cardboard with a piece of parchment or wax paper glued to the other side to prevent it from sticking to the dough. Then, carefully cut the cardboard into the shape of the template.

    Take a 2nd copy of the template and fold it in half lenghtwise, down the middle of the tower. This will give you the slope you need to make a baking ramp so all the pieces will fit together (more or less). I cut out cardboard “ribs” in the shape of the slope and fashioned them together with aluminum foil to create the baking ramp.

    Roll out your gingerbread and cut out 4 copies of the eiffel tower template. Bake each one individually on the baking ramp so they come out curved. They may not fit together perfectly, but they should be pretty close. A good, thick icing will take care of the rest ๐Ÿ™‚

    Hi Scott,
    Would you be able to post your recipe for the gingerbread or is it a trade secret?
    We were going to get one made as our wedding cake, but then got the quote that didn’t include decorating it, that was out of our budget, so we’re going to attempt our own.
    I made a gingerbread bi-plane a couple of years ago, but the g-bread was too soft & it collapsed just before it’s great unveiling. It was very humid that Christmas, which was part of the problem, I think. Christmas in Southern Hemisphere(summer) brings a whole wealth of issues with Christmas baking.
    Our wedding is between Christmas & New Year, so I’d like to get started making a side each couple of days in the next two weeks then build it the day before.

    Hi, I’m from Denmark and every year my family and I are making a gingerbread house. This year I would like to make it a bit speciel, and then I found your Eiffel Towers. It”s just amazing!
    But I can’t find the link to the pattern and to the slope. ๐Ÿ™ I Can get a lager photo of the Tower If i click on it, but is it just that one i need to use as a template?
